Thomas Dritsas, Vice President and Corporate Executive Chef for Del Frisco’s Restaurant Group, has announced the opening of the highly anticipated Stone Crab Claw Season.  From October 15 until May 15, this seasonal delicacy will be available in all Del Frisco’s Double Eagle Steak Houses and most Sullivan’s Steakhouses across the country. The sweet, firm crab claw meat is not widely available, only appearing on the menus of select restaurants outside of their native Florida.

Stone Crab Claws are flown fresh from the Florida Keys, one of the only regions where they are available.  Once harvested the claws are cooked fresh on the boat, then promptly chilled – never frozen – and then flown fresh to the restaurants. Guests may share claws with their table as an appetizer, enjoy them as their main entree or even add them as an accompaniment to the wide variety of steak and seafood items. Claws are cracked fresh to order and are served with a traditional Dijon sauce and fresh hot towels.

“Year after year our guests look forward to Stone Crab Claw season and we are thrilled for them to indulge in these gems of the sea,” said Dritsas.  “We love being able to offer stone crab claws as part of our shellfish menu. They are a great compliment to our steaks and a real treat for our guests.”

Stone Crab Claws are considered highly sustainable, as one claw is harvested from the crabs and then crab is returned to the sea so it can regenerate the claw.  Additionally, Claws must be at least 2.75 inches long to be harvested; claws cannot be taken from egg-bearing females.
