Just Shrimp Does It Again: Small Seafood Niche Adds Healthy AlternativesTinley Park, IL  (RestaurantNews.com)  Just Shrimp’s original location in Tinley Park recently added a few more non-fried items to their menu. Grilled shrimp skewers as well as fresh grilled salmon are now available daily. Both dishes are marinated the unique Mediterranean way, with extra virgin olive oil, lemon juice, and house seasoning and are served with a baked potato and mixed vegetables.

Recently, Just Shrimp started smoking salmon in-house, and added two sandwiches in which their customers seem to enjoy. The smoked salmon fillet sandwich is served cold, on a buttered and toasted soft bun with lime tarragon mayonnaise, lettuce and tomato. The smoked salmon salad sandwich on the other hand, is made by mixing chunks of smoked salmon, mayonnaise, celery, and house seasoning. Both sandwiches are served with French fries and coleslaw.

“With such positive customer response to our two sandwiches, we thought that adding a few more healthier alternatives would expand our clientele and give our customers a bit more variety,” said Christina Mihalos, general manager of the eatery. “Our core menu items are still the backbone of our success, but with millennials seeking a healthier alternative, we cannot miss this important segment if we want to continue to grow our business. If the demand continues to rise, there is no doubt that we will offer additional items in the future as well.”

To those of you who haven’t had a chance to stop in, Just Shrimp offers much more than its name suggests. With a small but substantial menu, customers are able to enjoy a wide variety of seafood that is wild caught and made fresh to order. The popular fried lobster dinner is a succulent, delicacy that many say is better served fried than any other way. Lake perch, catfish, and calamari are some other customer favorites.

The lobster roll could easily compete with any east coast lobster shack. Just Shrimp’s lobster roll is made the traditional way with whole Maine lobster, light mayonnaise, chopped celery, lemon juice, and house seasoning. It is served cold, on a lightly toasted and buttered New England roll.

All menu items are served with a generous amount of French fries, homemade coleslaw, and a choice of seven different dipping sauces. Looking to skip the fries and slaw? All menu items can be sold individually or by the pound as well.

“Because we understand being on the go and working around a budget, we try our best to offer a unique and affordable menu that our customers can enjoy at a reasonable price,” says Mihalos.

Other menu items include: fish n’ chips, oysters, gator, tilapia, clam strips, and smelts. The sandwich selection includes shrimp, lobster, oyster, and gator po’ boy sandwiches as well as a tilapia, catfish, and cod fish fillet sandwiches.
