Glencliff High School Takes Runner-Up Honor in Tennessee’s National Restaurant Education Foundation ProStart Competition
Nashville, TN (RestaurantNews.com) The future of America’s Dinner Table is looking bright, thanks to some great culinary students at Glencliff High School and an assist from Will Eudy, Shoney’s Executive Chef and Director of R&D, whose guidance and coaching helped lead the team to a second place finish in the National Restaurant Education Foundation Tennessee ProStart Competition.
“This team rocked,” said Eudy. “We had so much fun and it was really great to see this dedicated team recognized for their incredible work,”
Shoney’s, a proud supporter of education programs in the communities it serves, hosted the team comprised of Johnathan Quiteno, Shayla Sullivan, Emilio Lopez and Yuki Perez. Chef Eudy and instructor/chef Alyce Scrivner of Glencliff High spent more than 75 hours with the team, including time at Shoney’s headquarters, preparing them for the culinary skills competition, which featured 14 teams this past weekend at McGavock High School in Nashville.
The Glencliff team’s dishes of Roasted Red Pepper & Arugula Crostini, Roasted Red Shrimp with Tomato Basil Sauce on Asparagus with Black Pepper, Parsley Fettuccini and Salted Caramel Apple Tower with Cinnamon Cream impressed the judges, whose scores were based on safety and sanitation, creativity, taste, appearance and menu costing.
“Shoney’s really stepped up for this competition and really made a difference in these students’ lives,” said Scrivner, the culinary arts instructor at Glencliff. “They were the ideal partner and it was a privilege and pleasure to work with Chef Eudy and his team.”
Each student on Glencliff’s team will receive an $8,250 scholarship as a result of their runner-up finish.
The finish came as no surprise to Shoney’s Chairman and CEO David Davoudpour, who acquired the great American eatery in 2006. Davoudpour has been on a spirited mission to revitalize and reinvigorate Shoney’s family-friendly, southern style restaurant brand, which was one of the first family casual dining concepts in the United States when it began serving guests 67 years ago. Education and community involvement remain two of his top priorities.
“As an iconic American brand, we always want to pave the way for America’s future through involvement in education initiatives,” said Davoudpour. “And of course, we love to teach students how to make great food, which is what Shoney’s is all about.”
In addition to its support of the ProStart Competition, Shoney’s and its vendor partners have provided more than $500,000 and 154 scholarships since 2006 to deserving students through the Boy Scouts of America Learning for Life Navigators Program.
