After more than fifteen years of expansion through celebrated concepts including JINYA Ramen Bar, Robata JINYA and Saijo, founder Tomo Takahashi returned to the brand’s essence – to create what he calls the “final form” of JINYA. Originated in Japan and refined over 26 years since 2000, the concept reflects a long-standing evolution of the brand. The name highlights the concept’s evolution and unlike other concepts in the portfolio, the restaurant carries no descriptor – no “Ramen” or “Robata.” Instead, it simply stands as JINYA., with the period serving as a deliberate punctuation mark that signals the brand’s most complete expression to date. While JINYA Ramen Bar is the brand’s signature ramen concept and Robata JINYA offers an authentic, casual Japanese izakaya-style experience, where guests can enjoy traditional robata cooking in a lively and approachable atmosphere. A New Culinary Centerpiece: Live Fire

JINYA. places the spotlight on a dramatic Live Fire Grill experience, using both wood and charcoal to unlock bold, natural flavors. Traditional Japanese techniques are elevated through a modern live-fire approach – honoring precision, restraint and authenticity while embracing depth, smoke and intensity.

The menu showcases:

Menu highlights include dry-aged Ora King salmon and Kanpachi sashimi, live-fire grilled 16-ounce ribeye and bone-in short ribs, premium nigiri and signature rolls, and wood- and charcoal-grilled seafood, meats and seasonal vegetables. Bar bites and small plates feature innovative creations like crispy rice with spicy tuna, A5 wagyu carpaccio, and shrimp toast with optional caviar or uni, which has been one of its popular signature items since the opening of the first Tokyo location in 2000.

Complete the experience with noodle and rice dishes such as A5 Wagyu Garlic Rice or Lobster Garlic Noodles, and finish with Japanese-inspired desserts including Ube Mont Blanc and Matcha Tiramisu.
