Lessons learned in Utica helped make Panera rise

When you walk into a Panera Bread location, much of what you’re enjoying – the comfortable, customer-friendly atmosphere, the signature salad, sandwich and panini lines, even the free wireless Internet – was developed under an area native.

Scott Davis, now 47 and chief concept officer and executive vice president at Panera Bread, first learned to appreciate food and love restaurants right here in the Mohawk Valley.

That passion recently paid off when he received the Top Innovator award at the Nation’s Restaurant News’ MenuMaster Awards.

Ronald Shaich, founder and executive chairman of Panera Bread, said Davis – whom he has worked with for more than two decades – is a driving force behind the scenes at the company.
