Modmarket, a restaurant company that serves fast foods that are good for you opened its second location in Glendale at 1000 South Colorado Boulevard, next to Barnes & Noble, Pinkberry and Tokyo Joe’s in Denver, Colo. in early January 2011.
The seasonal menu features gourmet-quality salads, sandwiches, soups and brick oven pizzas that are made from simple, whole ingredients — real foods like raw produce, whole grains and humanely raised, all natural meats. Everything from the salad dressings to the rustic whole grain dough is made from scratch each day, which allows Modmarket to provide consumers with exceptional, nutritious foods at reasonable prices.
“We strive to bring the latest innovations into our restaurants,” said Rob McColgan, co-owner of Modmarket. “We design our restaurants with a modern and natural feel. The use of an open kitchen creates a comfortable environment that highlights the fresh ingredients used, rather than hiding them in the back of the house. Sustainable materials and natural daylight produce a unique environment that is enjoyable to dine in.”
Owners Anthony Pigliacampo and Rob McColgan opened the first location in Boulder, Colo. in 2009, after years of working in health food innovation consulting, business, finance and wealth management. After meeting in high school, Pigliacampo and McColgan knew they wanted to do business together and saw a need for fast, real and affordable food, all served in a modern environment. Being health conscious and active are general ways of life for Pigliacampo and McColgan, so delivering gourmet-quality, innovative and seasonal foods was an easy step for them.
“After years of research and testing food choices in various states, we knew Colorado would be a great market to launch in because of its health and sustainable practices and population,” said Pigliacampo. “We knew that if we succeeded with our vision of creating cravable, affordable, gourmet fast-casual food that is sustainable for your health as well as the environment, we would be able to be successful in many locations. We look at Colorado as the first of many states for Modmarket.”
