Biscuit Belly Announces Expansion Plans in LexingtonLouisville, KY  (RestaurantNews.com)  Biscuit Belly, a Kentucky based “craft casual” brunch restaurant serving up warm hospitality and chef-driven gourmet biscuit breakfast sandwiches, is eager to announce their plans to expand the Lexington, Kentucky market. Current Biscuit Belly franchise partners, Shoffner Family Foods, have signed two new leases at Leestown Road/Great Acres, 112 Lucille Dr. and at Ethington Shops, 4235 Harrodsburg Rd. The veteran franchising group also plans on developing the Knoxville, TN market, working to bring a better brunch experience to more communities.

Shoffner Family Foods includes sisters Madison Shoffner and Mallory Shoffner Quintero, and parents Jay and Kelly Shoffner. The family has a long and successful history in the franchise restaurant world. Their grandfather, J. Roy Shoffner, was among the first Kentucky Fried Chicken franchise owners, eventually growing to open and operate 34 KFCs and 10 Long John Silver’s locations in Kentucky, Tennessee and Indiana. The next generation of Shoffner family franchise owners have already added one Biscuit Belly location to their roster, recognizing the brand’s creative menu, innovative business model, and growing following as signs that the Biscuit Belly brand is leading the way in the brunch space.
