Each roast is slow-cooked at low temperature for 18 hours, dry-brined for flavor, kissed with hickory smoke, and held at 135°F true medium rare for ideal tenderness. Every slice is carved to the classic, one-inch-thick King Cut, thick, rosy, juicy, and with a perfectly seasoned crust and visible marbling that promises a rich, buttery bite.

The secret behind this elevated prime rib experience begins long before it reaches the kitchen. “I was literally born into the meat packing business,” noted Chef Schwerd, whose family has been deeply involved in cattle farming and meat packing for generations, dating back to his grandfather, Edward Preston Schwerd, who established Meridian Meat Packers in Idaho in the 1950s.  The tradition continued with Red Steer Meats in Phoenix, focusing on quality, consistency and a deep understanding of beef from pasture to plate.
