Strategic leadership expansion strengthens foundation for long-term success and nationwide development
Dallas, TX (RestaurantNews.com) CRÚ Wine Bar & Bistro, renowned for its sommelier-curated wine and modern American cuisine, has appointed a new Board of Directors to help steer its brand evolution as the company furthers its national expansion.
The newly restructured team combines long-time company veterans with strong talent in key disciplines to support the brand’s long-term sustainability efforts and enhance guest experience.
“Our new board members have been with the team since the very beginning,” said Patrick Colombo, founder and CEO of CRÚ. “Blending that legacy experience with expertise and perspective strengthens our foundation and ensures we continue to evolve. We’re honoring the roots that built CRÚ while embracing new ideas and innovation that will define its future.”

Serving on the newly expanded leadership team:
Noel Petrin, director of procurement and training: With over 30 years in the hospitality industry, Petrin helped open CRÚ’s first location in 2002 and continues to lead its national expansion. As a Certified Specialist of Wine, he oversees operations and guides the brand’s acclaimed wine program.

Foster Smith, director of all operations: A Certified Sommelier and Specialist in Wine and Spirits, Smith brings 40 years of hospitality experience across New Orleans, New York and Atlanta, combining deep wine knowledge with a passion for memorable dining.

Jim Oetting, senior culinary director: A James Beard House alumnus and graduate of the Scottsdale Culinary Institute, Oetting oversees menu development, culinary consistency and chef mentorship across all CRÚ locations.
Lina Street, director of events and catering: With over 25 years in hospitality and as a founding member of the CRÚ team, Street has built sales and catering programs across multiple locations, driving growth and guest engagement nationwide.
As part of the leadership expansion, CRÚ is also introducing its Wine University, a new internal education initiative designed to advance wine knowledge, service standards and team development across all locations. This program reflects the brand’s continued investment in its people and commitment to delivering the signature CRÚ experience every guest expects.

CRÚ currently operates 10 locations across four states and three major airports and is preparing for accelerated national growth. Backed by new leadership, the brand will begin expanding in 2026 with new openings in Atlanta, Dallas and other key markets.
