Ken Myres, president of the Tony Roma’s chain. Its parent company, Romacorp Inc., is based in Dallas, but Tony Roma’s runs its restaurant operations out of Orlando. Most restaurants are franchised, but five of 10 corporate-owned ones are in South or Central Florida. Myres, 60, recently spoke with Orlando Sentinel staff writer Sandra Pedicini.
CFB: How long have you had operations in Orlando?
We really within the last seven years have been developing more of the operations nerve center here in Orlando. To be very close to the restaurants is key. We don’t have any operating restaurants in the Dallas area.
