London’s iconic cheese conveyor belt restaurant opening in landmark Fifth Avenue destination
New York, NY (RestaurantNews.com) Pick & Cheese, the London-born concept that reimagines how people experience artisan cheese, will open its first U.S. location in February 2026 inside Shaver Hall, the new culinary destination taking shape in the landmark former Lord & Taylor building at 424 Fifth Avenue.
Founded by entrepreneur and cheese advocate Mathew Carver, Pick & Cheese transforms the playful format of a revolving sushi bar into a celebration of artisan cheese. Guests will pull up a stool at a 200-foot conveyor belt, the brand’s largest yet, and watch plates of small-producer cheeses glide past, each paired with a seasonal accompaniment. The menu will also feature made-to-order grilled cheese, baked cheese, sweet treats, and wine on tap.

“From the start, Pick & Cheese has been about championing independent cheesemakers,” said Carver. “When we decided to bring the concept to the U.S., we wanted to do it in a way that celebrates America’s own cheese culture. The creativity and passion of the makers here is extraordinary, and Shaver Hall is the perfect stage to showcase it.”
The U.S. expansion follows more than a year of research and plenty of tastings. Carver and his team traveled across the Northeast, visiting farms, affineurs, and creameries to meet the makers behind America’s growing cheese culture. The lineup will showcase producers such as Four Fat Fowl in the Hudson Valley, Perrystead Dairy in Pennsylvania, and Jake’s Gouda in Upstate New York.
“I first saw Pick & Cheese in an Instagram video over dinner one night, and I couldn’t stop thinking about it,” said Randy DeWitt, co-founder of The Food Hall Co. “I flew to London to meet with Mathew, and immediately knew this concept had the kind of energy we wanted for Shaver Hall. It offers an experience unlike anything New Yorkers have seen before.”
Shaver Hall, opening early 2026, spans 35,000 square feet and will feature 11 chef-curated eateries, two full-service restaurants, two cocktail bars, and a modern bodega with a 20-tap beer wall. Inspired by Dorothy Shaver, the pioneering president of Lord & Taylor, the hall is designed as a modern gathering place that celebrates discovery.
