“I’m excited to get CRUST into more markets. We’ve been a fan favorite everywhere we’ve touched down, and we’ve built a concept that is approachable, simple and scalable. Everyone loves pizza – it can work just about anywhere,” said Jim Cervone, Owner/Head Pizzanista of CRUST.

Founded in 2020, CRUST takes a dough-first approach to its craft. Every CRUST pizza is made using a special blend of Italian flours and old-world techniques. The result is a flavorful, thin, and airy crust with a soft, crunchy bite. The menu is intentionally simple, says Cervone, allowing the dough and other high-quality ingredients to take center stage.

“With CRUST, we’ve created something that stands out through the quality of our dough, our ingredients, and the experience we provide, and we’re excited to see where we can take it next,” Cervone added.

CRUST describes its Neo-New York style as a combination of traditional New York pizza techniques and Neapolitan influences. And at the centerpiece of it all sits a tech-driven process that uses a dough rounder, dough press, and electric conveyor oven to portion, shape, and bake its homemade Italian-flour dough.

The system doesn’t stop with the oven. CRUST pizzas are assembled front of house along an efficient production line, allowing customers to watch their pizza come together. The process is designed so school-aged employees can step into the role without prior restaurant experience, receiving extensive training to execute each step with precision, speed and courtesy.

The result of CRUST’s fine-tuned pizza process is a streamlined operation that delivers artisan pizza in fast-casual time.

As it kicks off its franchise expansion, the pizza brand is initially focusing on Northeast expansion, targeting eastern Massachusetts, the Albany area, Putnam and Westchester counties, North New Jersey and Long Island, with opportunities also available nationwide.

CRUST provides training and support for its franchise partners, covering the development and operation of each location, including site selection, buildout design, lease negotiation, staffing guidance, equipment and food preparation protocols, vendor relationships, marketing tools, and ongoing operational guidance.

Cervone, a CPA, custom builder, and experienced entrepreneur, also provides hands-on guidance throughout the process, giving franchise partners direct access to his experience in building and operating the CRUST concept.
