Family pizza and ice cream brand opens its third Minnesota location Aug. 31
Mendota Heights, MN (RestaurantNews.com) Happy Joe’s Pizza & Ice Cream is opening in Mendota Heights on Monday, Aug. 31, bringing its portfolio of made-to-order pizza, hand-scooped ice cream, arcade games, and full-tilt celebration to the community for the first time.
Located at 750 Main St., Suite 100, the restaurant is locally owned and operated by Area Developer and Franchisee Brian Smith and becomes the third Happy Joe’s in Minnesota, joining Crookston and New Ulm. The brand arrives with a built-in audience. Since 1972, Happy Joe’s has built a devoted Midwest following of families who grew up on its pizza and ice cream treats and now bring their own children through the door.
Two regional favorites come together at the Mendota Heights restaurant, where guests will find Bridgeman’s Ice Cream, a Minnesota-made brand based in Woodbury, alongside the full Happy Joe’s menu. The restaurant also offers underground parking for winter visits and an outdoor patio for warm-weather dining.

For franchisee Brian Smith, the opening is a full-circle moment. He grew up eating at Happy Joe’s, and now he’s able to introduce the brand to the next generation.
The opening continues Happy Joe’s nationwide expansion with franchisees who share the brand’s family-first approach, with Minnesota a priority market in that growth. The Mendota Heights restaurant marks the brand’s 47th location systemwide, and the first of six (6) Happy Joe’s locations that Brian’s company will open, and/or subfranchise, in Minnesota.
For guests looking to be part of the celebration, a Lollapalooza pizza-cutting, Happy Joe’s GIANT pizza, will take place at 3:30 p.m. on opening day. Happy Joe’s in Mendota Heights will offer dine-in, carryout, and delivery, with hours from 7 a.m. to 9 p.m. Guests can also book the party room for birthday parties, team celebrations, and group gatherings.
